Vegetable Lasagne

This vibrant vegetable lasagne offers a fresh and tangy twist on the traditional Italian comfort food. By swapping a heavy béchamel for creamy goat’s cheese and briny black olives, this dish achieves a sophisticated flavour profile that remains light enough for a midweek meal. Packed with diced courgettes, summer squash, and sweet roasted red peppers, it is a fantastic way to enjoy a variety of seasonal produce in one satisfying bake.

As a nutritious vegetarian main course, this recipe uses whole-wheat pasta sheets to provide a nutty depth and extra fibre. It is an ideal choice for family dinners or casual entertaining, as it can be prepared in advance and baked until golden. Serve this wholesome lasagne with a crisp green salad and a drizzle of balsamic glaze for a complete, restaurant-quality meal at home.
