This classic recipe for roasted parsnips with parsley celebrates the natural, earthy sweetness of one of Britain’s favourite root vegetables. By roasting the parsnips at a high temperature with a combination of olive oil and butter, you achieve a beautifully caramelised exterior while the centres remain tender and creamy. The addition of fresh Italian parsley at the end provides a bright, herbaceous lift that balances the rich flavours perfectly.
As a versatile vegetarian side dish, these parsnips are an essential accompaniment to a traditional Sunday roast or a festive Christmas dinner. They are naturally gluten-free and packed with fibre, making them a healthy yet comforting addition to any autumnal or winter menu. Serve them alongside roasted meats or a nut roast for a truly satisfying homemade meal.
