Pimento Corn Muffins

This savoury pimento corn muffins recipe is a wonderful vegetarian addition to any brunch or dinner table. Combining the slight crunch of golden cornmeal with the gentle sweetness of chopped pimentos, these muffins offer a vibrant burst of colour and a southern-style flair. The use of buttermilk ensures a tender, moist crumb that balances the robust texture of the maize perfectly, making them an ideal partner for a bowl of spicy chilli or a hearty vegetable stew.

Quick to prepare and even faster to bake, these homemade treats are best served warm from the oven with a generous smear of salty butter. Because they rely on simple larder staples and shop-bought jarred pimentos, they are a practical choice for busy weeknights when you need a comforting savoury bake. Whether you are hosting a casual lunch or looking for a tasty snack, these muffins provide a delicious twist on a classic cornbread.
