Mixed Lettuce Chiffonade with Gorgonzola-Herb Dressing

This sophisticated mixed lettuce chiffonade is a masterclass in texture and balance. By finely slicing a variety of bitter and crisp leaves—including radicchio, endive and romaine—you create a light, elegant base that perfectly catches the dressing. The star of the show is the creamy gorgonzola-herb dressing, which combines the tang of buttermilk and soured cream with the punchy, savoury notes of soft blue cheese.

As a versatile vegetarian dish, this salad works beautifully as a refreshing starter for a dinner party or as a vibrant side to grilled mains. The combination of fresh flat-leaf parsley and chives provides a grassy brightness that cuts through the richness of the cheese. It is a simple yet refined way to elevate seasonal salad leaves into something truly special.
