Haricots Verts (Thin French Green Beans) with Herb Butter

This elegant vegetarian side dish features slender haricots verts tossed in a fragrant, homemade herb butter. By combining fresh flat-leaf parsley and tarragon with zesty lemon and subtle shallots, you create a sophisticated flavour profile that elevates the natural sweetness of the beans. The contrast between the vibrant, crisp-tender vegetables and the rich, melted butter makes this a versatile addition to any dinner table, from a casual midweek meal to a formal Sunday roast.

Quick to prepare and naturally gluten-free, these french green beans provide a healthy dose of fibre and vitamins while feeling thoroughly indulgent. For those who like to plan ahead, the herb butter can be prepared well in advance and kept in the fridge or freezer. Simply toss it through the freshly blanched beans just before serving for a bright, seasonal finish that requires minimal effort at the last minute.
