Golden Potatoes with Caper Brown-Butter Crumbs

These golden potatoes with caper brown-butter crumbs offer a sophisticated twist on a classic vegetarian side dish. By parboiling the potatoes before roasting, you ensure a tender interior that contrasts beautifully with the crisp, savoury topping. The combination of nutty beurre noisette and punchy, chopped capers provides a deep flavour profile that elevates the humble potato into something truly special for a dinner party or Sunday lunch.

This versatile potato dish works wonderfully alongside roasted roots or as a substantial accompaniment to a fresh green salad. Using fresh baguette crumbs rather than dried ones ensures a light, crunchy texture that catches the herb-infused butter perfectly. It is an effortless way to bring professional-quality French flavours to your home cooking while keeping the preparation simple and stress-free.

Ingredients for Golden Potatoes with Caper Brown-Butter Crumbs

  • 1.4kg Yukon Gold potatoes, peeled, halved, and sliced 1/4 inch thick

  • 1 stick unsalted butter

  • 60g drained capers, chopped

  • 475ml coarse fresh bread crumbs (preferably from a baguette)

How to make Golden Potatoes with Caper Brown-Butter Crumbs

Put a 4-sided sheet pan in upper third of oven and preheat oven to 218°C.

Cover potatoes with 2 inches water in a 5-to 6-quart pot and add 1 tablespoon salt. Simmer until almost tender, about 10 minutes. Drain potatoes well.

While potatoes simmer, heat butter in a small saucepan over medium-low heat, swirling pan occasionally, until browned and fragrant, about 5 minutes. Remove from heat and stir in capers. Keep warm, covered.

Toss potatoes with 45ml caper butter, then spread out in hot sheet pan. Stir remaining caper butter into bread crumbs and scatter over potatoes. Roast, turning potatoes once or twice, until potatoes are tender and crumbs are golden, about 20 minutes. Season with salt.
