Fresh Lumpia Wrappers

Creating your own fresh lumpia wrappers at home is a rewarding way to elevate your Filipino-inspired cooking. These delicate, paper-thin pancakes are surprisingly simple to master with just a few store-cupboard staples like flour and eggs. Unlike deep-fried spring rolls, these soft wrappers provide a silky texture that beautifully complements crunchy vegetable fillings and savoury peanut sauces. They are a fantastic addition to any vegetarian repertoire, offering a light yet satisfying base for a nutritious lunch or starter.

This versatile recipe produces a flexible dough that is easy to handle and quick to cook in a standard non-stick frying pan. While they are traditionally used for fresh vegetable lumpia, these wrappers also work well as a homemade alternative for various Asian-style wraps. Prepare a batch in advance and keep them warm in a low oven to ensure they remain soft and pliable for your guests. It is a cost-effective and authentic way to enjoy homemade Filipino cuisine at its best.

Ingredients for Fresh Lumpia Wrappers

  • 240ml flour

  • 1 egg

  • Corn, grapeseed, or other neutral oil as needed

How to make Fresh Lumpia Wrappers

  1. Whisk together the flour, egg, and 240ml water until very smooth.

  2. Heat an 8- or 10-inch nonstick skillet over medium heat. When a drop of water skitters across the surface before evaporating, add a little oil—just a teaspoon or so. Ladle about 2 tablespoons of the batter into the skillet and swirl it around so that it forms a thin layer on the bottom of the pan. Pour the excess batter back in the bowl.

  3. When the wrapper is just cooked through and the edges lift away from the pan, remove it carefully (you need not turn it over). Repeat with the remaining batter. If you like, keep the wrappers warm, covered, in a 93°C oven, for up to an hour before filling and serving.
