This curried butternut squash and red lentil soup is a nutritious vegetarian dish that brings warmth and depth of flavour to the table. The sweetness of the roasted squash pairs perfectly with the earthy red lentils, creating a rich texture that is both comforting and filling. Infused with aromatic Madras curry powder, fresh ginger and garlic, it offers a gentle heat that makes it an ideal choice for a restorative weekday lunch or a light evening meal.
Packed with plant-based protein and fibre, this healthy soup is as practical as it is delicious. The addition of a homemade coriander oil provides a bright, herbaceous finish that lifts the savoury notes of the broth. For a more substantial dinner, serve it over a mound of fluffy basmati rice to soak up the spiced liquid, or enjoy it simply with a slice of crusty bread.
