These savoury cottage cheese pancakes offer a sophisticated twist on a classic breakfast staple. By incorporating caramelised onions and creamy cottage cheese into the batter, you create a dish that is light in texture yet rich in deep, umami flavour. They are an excellent vegetarian option for those looking to add a little more protein to their morning routine without sacrificing comfort.
Perfect for a relaxed weekend brunch or a quick midweek supper, these pancakes are best served warm from the frying pan. The subtle tang of the cheese balances beautifully with the sweetness of the golden onions, making them incredibly versatile. Try pairing them with a dollop of soured cream or a handful of fresh chives for a simple, nourishing meal that feels truly indulgent.

Ingredients for Cottage Cheese Pancakes
50g chopped onion
1/4 teaspoons salt
1/4 teaspoons black pepper
7 tablespoons unsalted butter, melted
350ml whole-milk cottage cheese
3 large eggs
6 tablespoons plain flour
How to make Cottage Cheese Pancakes
Preheat oven to 93°C.
Cook onion, 1/8 teaspoons salt, and 1/8 teaspoons pepper in 2 tablespoons butter in a small heavy skillet over moderately low heat, stirring occasionally, until golden brown, about 12 minutes. Transfer to a bowl, then add cottage cheese, eggs, flour, 30g butter, remaining 1/8 teaspoons salt, and remaining 1/8 teaspoons pepper and whisk until combined.
Brush a 12-inch nonstick skillet with some of remaining butter and heat over moderate heat until hot but not smoking. Working in batches of 5, scoop 1/8-cup measures of batter into skillet and cook until undersides are golden brown, 1 to 2 minutes. Flip and cook until undersides are golden brown and pancakes are cooked through, 1 to 2 minutes more. Transfer to a baking sheet and keep warm in oven. Brush skillet with butter between batches if necessary.
