This vibrant tomato and corn salad is a celebration of fresh, seasonal produce. Using a variety of heirloom tomatoes adds a beautiful range of colours and textures to the plate, while the sweetness of the cooked corn pairs perfectly with the peppery bite of fresh rocket. A simple balsamic and Dijon mustard dressing ties everything together, highlighting the natural sweetness of the vegetables without overpowering their delicate profile.
As a versatile vegan dish, this salad works brilliantly as a light lunch or a colourful side for a summer barbecue. It is naturally gluten-free and packed with nutrients, making it a healthy choice for any occasion. For the best results, ensure your tomatoes are served at room temperature to allow their full depth of flavour to shine through.
