This vibrant shredded cabbage salad with pomegranate and tomatoes is a masterclass in texture and fresh flavours. By lightly curing the green cabbage with a pinch of sugar and salt, the leaves soften beautifully while retaining a satisfying crunch. The addition of juicy cherry tomatoes and tart pomegranate seeds provides a wonderful contrast, making this vegan dish a standout addition to any seasonal spread.
Refreshing and versatile, this salad is an excellent choice for a healthy lunch or as a colourful side dish for grilled mains. The combination of fresh mint and coriander adds a fragrant, herbaceous lift that perfectly balances the zesty lemon and vinegar dressing.
