This shaved summer squash salad is a vibrant celebration of seasonal produce, combining thinly ribboned courgettes and yellow pattypan squash for a beautiful, textural finish. The mild sweetness of the squash is perfectly balanced by a zesty lemon and garlic dressing, while a handful of peppery baby rocket adds a fresh, punchy note. It is an exceptionally light and elegant dish that captures the essence of a British summer garden on a single plate.
Ideal as a healthy lunch or a sophisticated side dish for a weekend barbecue, this vegan-friendly recipe is packed with vitamins and healthy fats from the extra-virgin olive oil and roasted almonds. The addition of crushed nuts provides a satisfying crunch that contrasts beautifully with the tender squash ribbons. For the best results, serve immediately while the rocket is crisp and the dressing is bright.

In a small bowl, whisk together extra-virgin olive oil, fresh lemon juice, minced garlic clove, and kosher salt to taste. Pour dressing over squash. Let stand for a few minutes, then add a few handfuls of baby rocket. Shave a little Pecorino over the squash and toss. Season with kosher salt and freshly ground black pepper.
