This vibrant sautéed kale with smoked paprika is a simple yet sophisticated vegan side dish that brings a wonderful depth of flavour to any meal. By blanching the kale before pan-frying, the leaves retain their bright colour while softening perfectly to absorb the warmth of the spices. The addition of aromatic onions and a hint of crushed red pepper creates a savoury base that complements the natural earthiness of the greens.
Packed with nutrients and naturally gluten-free, this versatile dish is ideal for a quick midweek dinner or as a healthy accompaniment to a Sunday roast. Whether you choose sweet pimentón for a mellow smokiness or the hot variety for a gentle kick, this homemade recipe is an excellent way to enjoy seasonal greens with a Mediterranean-inspired twist.
