This vibrant citrus grill marinade is a versatile vegan staple that brings a bright, punchy flavour to any summer barbecue. By combining the sharp acidity of lemon and lime with the mellow sweetness of orange juice, it creates a balanced base that tenderises and seasons simultaneously. Infused with aromatic garlic, cumin and oregano, this marinade offers a wonderful depth of flavour that complements everything from charred Mediterranean vegetables to firm blocks of tofu.
Quick to prepare using simple store-cupboard ingredients and fresh fruit, it is an effortless way to elevate your plant-based cooking. Simply whizz the ingredients together in a blender and let your chosen ingredients soak up the zesty infusion before hitting the grill. It is particularly delicious when used for vegetable skewers or thick slices of aubergine, providing a fresh, savoury finish that everyone will enjoy.
