Lemon-Lime, Corn, and Jalapeño Relish

This zesty lemon-lime, corn, and jalapeño relish is a vibrant addition to any summer spread. Combining the natural sweetness of fresh corn kernels with the sharp brightness of citrus and a gentle heat from chopped chillies, it offers a beautifully balanced flavour profile. The use of both zest and juice creates a layered citrus punch that cuts through rich foods, making it an excellent accompaniment for grilled vegetables or plant-based proteins.

As a versatile vegan side dish, this relish is particularly well-suited for entertaining as it can be prepared a day in advance. Resting the ingredients in extra-virgin olive oil allows the spicy jalapeño and aromatic citrus oils to meld together perfectly. Serve it at room temperature to ensure the high-quality olive oil provides a silky mouthfeel and carries the fresh, zingy notes to every bite.
