This vibrant kohlrabi and pea shoot salad is a refreshing vegan dish that celebrates crisp textures and nutty, savoury flavours. The combination of julienned kohlrabi and lightly blanched pea shoots provides a wonderful crunch, while the toasted Japanese-style sesame dressing adds a rich depth. It is a sophisticated yet simple salad that works beautifully as a light seasonal starter or a clean-tasting side dish for an Asian-inspired feast.
Low in calories but high in nutrients, kohlrabi is an excellent source of vitamin C, making this a healthy choice for those seeking a nutritious lunch. The dressing can be prepared in advance, allowing the flavours to meld, though it is best to toss the salad just before serving to maintain the peak crispness of the vegetables.

Ingredients for Kohlrabi Slivers and Pea Shoots with Sesame Dressing
60g snow-pea shoots, halved (475ml )
350g trimmed kohlrabi bulbs
45g Japanese-style sesame seeds (not hulled), toasted
45ml plus 1 teaspoon reduced-sodium soy sauce
2 teaspoons sugar
2 teaspoons mirin (Japanese sweet rice wine)
1 tablespoon water
an adjustable-blade slicer (fitted with julienne blade) or a julienne peeler
a suribachi (Japanese sesame-seed-grinding bowl) or an electric coffee/spice grinder
How to make Kohlrabi Slivers and Pea Shoots with Sesame Dressing
Bring 1.9L water to a boil with 2 teaspoons salt, then quickly blanch pea shoots until colour brightens, about 10 seconds. Drain immediately and transfer to a bowl of cold water to stop cooking. Drain and pat dry.
Peel kohlrabi bulbs with a small sharp knife, then cut into matchsticks with slicer. Toss together with shoots in a serving dish.
Finely grind sesame seeds in suribachi or grinder, then transfer to a bowl and stir in remaining ingredients. (Dressing will be thick; thin slightly with additional water if desired.)
Serve salad drizzled with some of dressing and serve remainder on the side.
