This vibrant fennel and radicchio salad is a masterclass in balancing bold Mediterranean flavours. The natural aniseed sweetness of thinly shaved fennel provides a crisp contrast to the slightly bitter, peppery notes of the radicchio. Dressed in a punchy vinaigrette featuring salty Kalamata olives and zesty lemon, this dish offers a sophisticated profile that works beautifully as a refreshing starter or a crunchy side for grilled dishes.
As a versatile vegan salad, it relies on high-quality pantry staples like Dijon mustard and extra-virgin olive oil to create a rich, emulsified dressing. It is an excellent choice for those seeking a light, plant-based meal that doesn't compromise on texture or taste. Serve it immediately to appreciate the bright colours of the radicchio and the aromatic fragrance of fresh basil and chives.
