This vibrant fennel and orange salad is a brilliant example of how simple, fresh ingredients can create a sophisticated vegan dish. The crisp, aniseed notes of thinly sliced fennel pair beautifully with the sweet acidity of fresh orange segments, while the mustard greens provide a peppery bite. It is a light and refreshing option that works equally well as a summery starter or a bright side dish for a weekend lunch.
The homemade lemon and ginger vinaigrette adds a zesty, warming depth that ties the salad together, while the golden baguette croutons provide a much-needed crunch. Rich in vitamin C and high in fibre, this healthy salad is as nourishing as it is colourful. Serve it immediately after tossing to ensure the bread stays perfectly crisp against the juicy citrus.
