Cucumber and Raisin Relish with Mustard Seeds

This vibrant cucumber and raisin relish with mustard seeds is a refreshing vegan condiment that brings a bright, tangy lift to any plate. The combination of crisp cucumber and sweet golden raisins creates a delightful contrast, while the mustard seeds provide a gentle heat and a pleasing pop of texture. It is a fantastic way to use seasonal cucumbers, transforming simple store-cupboard staples like cider vinegar and light brown sugar into a sophisticated preserve.

Perfect for summer dining, this versatile relish is an excellent addition to a plant-based barbecue or a traditional ploughman’s lunch. Because it requires at least two hours of chilling time to let the flavours marry, it is an ideal make-ahead component for busy midweek meals or weekend gatherings. Serve it alongside savoury tarts or grilled vegetables for a boost of acidity and crunch.
