This vibrant charred onion and cucumber salad offers a sophisticated twist on a classic summer side. By quickly grilling red onions until they are tender and slightly smoky, you create a wonderful depth of flavour that contrasts beautifully with the cool, crisp rounds of cucumber. A simple pickling of Fresno chillies in red wine vinegar adds a gentle heat and bright acidity, lifting the entire dish into something truly special.
As a versatile vegan dish, this salad is an excellent accompaniment to grilled vegetable skewers or as a refreshing component of a larger mezze spread. It is naturally healthy, hydrating, and quick to assemble, making it an ideal choice for outdoor dining or a light weekday lunch. Finish with a generous drizzle of extra virgin olive oil to marry the savoury, charred notes with the fresh herbs.
