Ingredients for Corn and Courgette Sauté

  • 2 tablespoons extra-virgin olive oil

  • 120ml chopped spring onions

  • 1/2 teaspoons finely chopped garlic

  • 475ml corn (from about 4 ears)

  • 2 medium courgette (450g total), quartered lengthwise, then cut crosswise into 1/4-inch-thick pieces

  • 1/4 teaspoons ground cumin

  • 1/4 teaspoons salt

  • 1/8 teaspoons black pepper

  • 1/2 cup chopped fresh coriander

How to make Corn and Courgette Sauté

Heat oil in a 12-inch heavy skillet over moderate heat until hot but not smoking, then cook spring onions, stirring occasionally, until softened, about 3 minutes. Add garlic and cook, stirring, 1 minute. Add corn, courgette, cumin, salt, and pepper and cook, stirring occasionally, until courgette is tender, 4 to 6 minutes. Stir in coriander and season with salt and pepper.
