Rocket, Fennel, and Apricot Salad

This vibrant rocket, fennel and apricot salad is a celebration of contrasting textures and seasonal flavours. The peppery bite of fresh rocket leaves pairs beautifully with the crisp, aniseed notes of thinly sliced fennel, while succulent apricots provide a delicate sweetness. Finished with a zesty shallot and white balsamic vinaigrette, this vegan dish offers a sophisticated balance that works wonderfully as a light lunch or a refreshing dinner party starter.

Nutritionally balanced and naturally gluten-free, this colourful salad is elevated by the addition of toasted pistachios for a satisfying crunch. It is an excellent choice for those seeking a plant-based option that doesn't compromise on elegance. Serve it alongside grilled sourdough or as a bright accompaniment to roasted Mediterranean vegetables to make the most of its fresh, summery profile.
