Apricot Miso Jam

This sophisticated apricot miso jam offers a complex balance of sweet, sharp and savoury notes. By using dried apricots and tart cherries as a base, the conserve develops a deep, concentrated fruit flavour that is beautifully enhanced by the subtle umami richness of white miso. Aromatic spices, including star anise and cinnamon, provide a warm background scent that makes this preserve feel truly special.

As a versatile vegan store-cupboard staple, this jam is excellent served alongside salty hard cheeses or spread generously over sourdough toast. The addition of sake or dry white wine adds a refined acidity, making it a wonderful gift for food lovers or an elegant addition to a weekend brunch spread. It is a quick and rewarding way to experiment with fusion flavours at home.
