This aromatic chilli and thyme spice mix is a versatile addition to any kitchen cupboard, offering a vibrant balance of heat and citrus. By drying fresh lemon zest and thyme in the microwave, you can capture their punchy flavours and combine them with the sharp heat of dried chillies and crunchy sea salt. It is an excellent way to season everything from pan-fried sea bass to roasted root vegetables.
As a low-sugar condiment, this homemade rub is a healthy alternative to shop-bought seasonings which often contain hidden fillers or sweeteners. Prepare a batch in advance to have a ready-made flavour booster on hand for busy weeknight dinners. It also makes a thoughtful gift for food lovers when presented in a small glass jar.
