This sophisticated smoked turkey and blue cheese sandwich offers a delicious balance of bold flavours and textures. The combination of smoky poultry and sharp, creamy cheese provides a satisfying hit of protein, while the red onions are gently sautéed and deglazed with vinegar for a tangy, caramelised finish. It is an elevated take on a classic deli favourite that works beautifully for a weekend lunch or a substantial midweek meal.
Using a seeded wholemeal bread or crusty ciabatta adds a pleasant crunch that stands up well to the peppery rocket mayonnaise. This high-protein dish is both nutritious and filling, making it ideal for those seeking a wholesome yet indulgent lunch option. For the best results, serve the onions while they are still slightly warm to help the blue cheese soften into the turkey layers.

2 8- to 275g red onions, cut into 1/3-inch-thick rounds
50ml red wine vinegar
6 cups trimmed large rocket leaves (about 110g ), divided

How to make Smoked Turkey, Blue Cheese, and Red Onion Sandwiches
Heat oil in large nonstick skillet over medium-high heat. Add onions and sauté until soft and lightly browned, breaking up onion rings, about 8 minutes. Remove from heat; stir in vinegar and season to taste with salt and pepper.
Chop enough rocket to measure 1 cup; place in medium bowl. Mix in mayonnaise. Season with salt and pepper. Spread about 80ml rocket mayonnaise over each cut side of bread. Divide turkey slices among 4 bread slices. Top with crumbled blue cheese, dividing equally. Top with red onions, then whole rocket leaves and bread.
