Skillet Chicken and Vegetables

This hearty one-pan chicken and root vegetable dish is an excellent choice for a nutritious, high-protein dinner. By browning the chicken thighs first, you unlock a deep savoury flavour that permeates the potatoes and carrots as they simmer in a delicate white wine and herb sauce. Using skin-on thighs ensures the meat remains succulent and tender, while the paprika adds a subtle warmth and beautiful golden colour to the finished plate.

Perfect for busy weeknights or a relaxed Sunday lunch, this warming casserole-style meal requires minimal cleanup and delivers a well-balanced serving of lean protein and essential vitamins. Serve it directly from the frying pan for a rustic touch, perhaps with some crusty bread on the side to soak up the delicious, wine-infused juices.
