Ingredients for Prawns with Salsa, Avocado, and Chips

  • 2 medium tomatoes, chopped (160g )

  • 40g chopped white onion

  • 1/4 cup finely chopped coriander

  • 1 to 2 teaspoons chopped fresh serrano chilli, including seeds

  • 2 tablespoons ketchup

  • 2 to 45ml fresh lime juice, divided

  • 450g peeled cooked prawns, cut into 1/2-inch pieces

  • 2 (6- to 230g ) firm-ripe avocados

  • 2 cups shredded green cabbage

  • 1/2 cup coarsely crumbled tortilla crisps

  • Equipment: 4 (450g) wide jars or containers with lids

  • Accompaniment: tortilla crisps

How to make Prawns with Salsa, Avocado, and Chips

Stir together tomatoes, onion, coriander, chilli, ketchup, 1 tablespoon lime juice, and 1/2 teaspoons salt. Stir in prawns and season with salt and pepper.

Mash avocados with remaining 1 to 2 tablespoons lime juice and 1/2 teaspoons salt.

Divide prawns mixture among jars and layer avocado, cabbage, and crumbled chips on top.
