These vibrant sausage, sourdough, and pepper spiedini offer a sophisticated twist on the classic grilled kebab. By threading smoky kielbasa, sweet peppers, and cubes of crusty bread onto skewers, you create a rustic, high-protein meal that is bursting with seasonal flavour. The sourdough cubes are a particular highlight, soaking up the savoury juices from the meat while crisping up beautifully over the flames.
Finished with a punchy rosemary and Dijon mustard vinaigrette, this dish is as nutritious as it is satisfying. Served over a bed of lightly dressed baby greens, it makes for a wonderful alfresco lunch or an impressive mid-week dinner. Using shop-bought sourdough and quality sausages keeps the preparation simple, allowing the bold Mediterranean flavours to take centre stage.

How to make Sausage, Sourdough, and pepper Spiedini
Prepare barbecue (medium-high heat). Whisk first 4 ingredients in small bowl, then whisk in oil. Season dressing with salt and pepper; set aside. On each of 8 metal skewers, alternately thread 3 pepper pieces, 2 sausage pieces, 4 onion pieces, and 2 bread cubes. Brush skewers all over with 1 tablespoon dressing each. Grill until lightly charred, turning often, about 12 minutes. Toss greens in large bowl with enough remaining dressing to coat; divide among 4 plates. Top with skewers. Brush skewers with more dressing.
