Potato and Boursin Frittata

This potato and Boursin frittata is a clever twist on a classic brunch staple, offering a rich and savoury flavour profile that feels truly indulgent. By using frozen shredded potatoes, you achieve a golden, crisp texture that pairs perfectly with the creamy, melted pockets of garlic and herb cheese. The spring onions add a fresh bite, making this a vibrant dish that works just as well for a quick midweek dinner as it does for a slow weekend morning.

As a high-protein option, this versatile dish is ideal for those looking for a satisfying meal that keeps you full for longer. It is naturally vegetarian, but for a more substantial serving, it pairs beautifully with ribbons of smoked salmon or salty prosciutto. Serve it straight from the oven with a simple green salad for a balanced, nutritious lunch that the whole family will enjoy.

  • 8 large eggs

  • 1/4 teaspoons salt

  • 1/2 teaspoons black pepper

  • 60ml olive oil

  • 475ml frozen shredded hash brown potatoes (from a 450g bag)

How to make Potato and Boursin Frittata

Put oven rack in middle position and preheat oven to 191°C.

Whisk together eggs, salt, and pepper until just combined.

Heat oil in an ovenproof 9- to 10-inch heavy nonstick skillet over high heat until very hot but not smoking. Add potatoes and spring onions to oil, stirring once, then cover and cook until beginning to brown, about 4 minutes. Stir potato mixture once, then cover and cook 3 minutes more.

Pour beaten eggs evenly over potato mixture and crumble cheese over eggs. Transfer skillet to oven and bake frittata, uncovered, until set and just cooked through, about 15 minutes. Invert a plate over skillet and, holding them together with oven mitts, invert frittata onto plate and serve immediately.
