Over Easy BLT

This over-easy BLT offers a sophisticated, protein-packed twist on the classic bacon sandwich. By swapping traditional white bread for toasted rye and adding a perfectly fried egg, this dish becomes a substantial meal suitable for a weekend brunch or a filling midweek lunch. The addition of a spicy chilli mayonnaise provides a subtle heat that cuts through the richness of the yolk, while fresh baby rocket adds a peppery crunch to every bite.

As a high-protein option, this recipe is excellent for those seeking a more nourishing sandwich that provides sustained energy throughout the afternoon. The combination of salty bacon and juicy vine-ripened tomatoes ensures a classic flavour profile, elevated by the silky texture of the over-easy egg. It is simple to prepare yet feels like a professional café-style treat made in the comfort of your own kitchen.

Ingredients for Over Easy BLT

  • 4 slices of bacon

  • 2 large eggs

  • Salt and black pepper, to taste

  • 60ml mayonnaise

  • 1 tablespoon chilli sauce

  • 4 slices rye bread, lightly toasted

  • 2 slices ripe tomato

  • 1 cup baby rocket

How to make Over Easy BLT

  1. Cook the bacon over medium heat in a nonstick skillet until golden brown and crisp, about 5 minutes on the first side and 2 minutes on the second side. Drain on a paper towel.

  2. Slide eggs into the skillet (with drippings) and fry until the white is set but the yolk is still soft, about 2 minutes. Carefully turn eggs over; cook 1 minute longer. Season with salt and pepper. Remove from heat.

  3. Stir mayonnaise and chilli sauce together. Spread the mixture on each slice of toast. Lay 2 slices of bacon over the mayonnaise on 2 slices of toast. Top each with a tomato slice, a fried egg, and the rocket. Cover with a second slice of toast. Cut in half and serve immediately.
