Kale and Chickpea Soup

This hearty kale and chickpea soup is a wonderful example of a rustic, warming meal that provides plenty of nutrition during the colder months. The combination of earthy kale and buttery chickpeas creates a satisfying texture, while the addition of diced Spanish chorizo provides a smoky depth and a beautiful vibrant colour to the broth. It is a brilliant way to use seasonal greens in a savoury, one-pot dish that feels both healthy and indulgent.

As a naturally dairy-free recipe, this soup is perfect for those seeking a lighter lunch or a nutritious midweek dinner. The potatoes break down slightly during simmering to naturally thicken the base, making it filling enough to be served as a main course. Enjoy it simply on its own or with a slice of crusty sourdough for a complete and comforting homemade meal.
