Golden Pancakes with Pecorino and Prosciutto

This elegant recipe for golden pancakes with pecorino and prosciutto offers a sophisticated twist on a classic savoury crepe. The thin, delicate batter provides a light base for the rich, salty notes of the pecorino Romano cheese and the buttery texture of the cured ham. Sifting the flour and straining the batter ensures an exceptionally smooth result, while the quick sear in the frying pan creates a beautiful golden colour that complements the savoury filling.

As a high-protein dish, these pancakes make an excellent choice for a nutritious brunch or a stylish light lunch. They are remarkably versatile—you can prepare the pancakes a day in advance and simply reheat them before assembly. Serve these folded triangles warm with a side of dressed rocket or a few sun-blushed tomatoes for a complete, restaurant-quality meal at home.

Ingredients for Golden Pancakes with Pecorino and Prosciutto

  • 130g unbleached plain flour

  • 1/4 teaspoons salt

  • 1 large egg

  • 350ml (or more) water

  • 30ml extra-virgin olive oil

  • 12 tablespoons freshly grated pecorino Romano cheese (about 90g )

  • 12 very thin slices prosciutto, each cut crosswise in half

How to make Golden Pancakes with Pecorino and Prosciutto

Sift flour and salt into bowl. Add egg, then gradually whisk in 350ml water (batter will be thin). Pour batter through strainer set over measuring cup.

Heat 12-inch nonstick skillet over medium-high heat. Add 1 teaspoon oil to skillet; brush over skillet. Pour in 80ml batter, immediately tilting skillet to allow batter to spread over bottom (if batter does not spread easily, thin with more water by teaspoonfuls). Cook until pancake is light golden on bottom, about 2 minutes. Turn pancake over and cook until bottom is light golden, about 1 minute. Transfer to paper towels. Repeat with remaining batter, adding 1 teaspoon oil to skillet for each pancake and stacking pancakes between paper towels. (Can be made 1 day ahead. Wrap layered with paper towels in foil and refrigerate. Heat foil packet in 149°C oven for about 15 minutes.)

Sprinkle 2 tablespoons cheese over each pancake. Top each with 4 half-slices prosciutto. Sprinkle with pepper. Fold pancakes in half and then in half again, forming triangles. Transfer to plates.
