Creole Crab Burgers

These Creole crab burgers offer a sophisticated twist on the classic seafood patty, blending sweet lump crabmeat with the gentle heat of cayenne and savoury Worcestershire sauce. This high-protein main course relies on a delicate balance of textures, with a soft, perfectly seasoned interior encased in a crisp, golden breadcrumb crust. Using spring onions and mustard adds a bright, sharp profile that cuts through the rich mayonnaise base beautifully.

Ideal for a quick weekend lunch or an easy midweek dinner, these burgers are a fantastic alternative to traditional beef patties. Serve them in toasted buns with crunchy iceberg lettuce and plenty of tartare sauce for a fresh, coastal-inspired meal. This recipe is an excellent choice for those looking to increase their protein intake while enjoying a lighter, more refined style of homemade burger.

Ingredients for Creole Crab Burgers

  • 450g lump crabmeat, picked over

  • 40g mayonnaise

  • 3 spring onions, thinly sliced

  • 1 large egg, lightly beaten

  • 1 teaspoon Worcestershire sauce

  • 3/4 teaspoons dry mustard

  • 1/2 teaspoons cayenne

  • 425ml fine dry bread crumbs, divided

  • 180ml vegetable oil

  • 4 kaiser rolls or hamburger buns, split and toasted

  • Accompaniments: tartar sauce

  • iceberg lettuce

How to make Creole Crab Burgers

Stir together crabmeat, mayonnaise, spring onions, egg, Worcestershire sauce, mustard, cayenne, 1/4 teaspoons salt, and 180ml bread crumbs in a bowl until just combined. Form into 4 (1-inch-thick) patties (3 1/2 inches in diameter; patties will be soft but will firm up when fried). Spread remaining cup bread crumbs on a plate, then dredge patties in crumbs, knocking off excess, and transfer to a platter.

Heat oil in a 12-inch heavy skillet over medium heat until it shimmers, then fry patties, turning over once, until golden, 5 to 6 minutes total. Transfer to paper towels to drain.

Assemble burgers with buns and accompaniments.
