This classic BLT salad reimagines the beloved flavours of a traditional British sandwich into a fresh, high-protein meal. By combining salty, crisp bacon with juicy cherry tomatoes and a creamy garlic dressing, this dish delivers a satisfying crunch and a punch of savoury flavour. The addition of golden croutons, toasted in the rendered bacon fat, provides a professional touch that elevates the simple ingredients into something truly special.
Ideal for a quick midweek lunch or a light weekend dinner, this salad is as nutritious as it is comforting. Using Boston or butterhead lettuce ensures a soft, delicate base that pairs perfectly with the zingy lemon and mayonnaise dressing. Serve it immediately while the croutons are still warm for the best textural contrast and a café-style experience at home.

1/4 loaf Italian bread
1/4 teaspoons minced garlic
1 tablespoon fresh lemon juice
60ml mayonnaise
1 tablespoon water
1 small red onion
230g cherry tomatoes (about 425ml )

How to make B.l.t. Salad
In a skillet cook bacon over moderate heat, stirring occasionally, until crisp. Reserving 1 tablespoon bacon fat in skillet, drain bacon on paper towels and crumble. Cut bread into enough 3/4-inch cubes to measure 240ml . Heat fat over moderately high heat until hot but not smoking and sauté bread cubes with salt to taste, stirring, until golden brown. Transfer croutons to paper towels to drain and cool.
In a small bowl whisk together garlic, lemon juice, mayonnaise, water, and salt and pepper to taste. Slice onion and halve tomatoes. Tear lettuce into bite-size pieces.
In a large bowl toss together onion, tomatoes, lettuce, half of bacon and croutons, salt and pepper to taste, and enough dressing to coat.
Divide salad between 2 plates and top with remaining croutons and bacon.
