Whole Sardines with Fresh Herbs and Crème Fraîche

This elegant recipe for whole sardines with fresh herbs and crème fraîche offers a sophisticated way to enjoy one of the sea's most nutritious offerings. By gently curing the fillets in a zesty lemon marinade before dressing them with fragrant thyme and oregano, you create a dish that is both vibrant and deeply savoury. It is a wonderful choice for those looking to incorporate more oily fish into their diet without sacrificing delicate flavour.

As a heart-healthy starter or light lunch, these sardines are perfectly balanced by the addition of cool, velvety crème fraîche. The acidity of the citrus and the herbal notes of the Mediterranean dressing pair beautifully with crusty wholemeal bread or a crisp green salad. Simple to prepare yet impressive to serve, this dish is a testament to the beauty of using fresh, seasonal ingredients in a mindful way.
