Tomatoes and Haricots Verts with Anchovies

This vibrant tomato and green bean salad with anchovies is a celebration of simple, high-quality Mediterranean ingredients. By combining succulent vine-ripened tomatoes with crisp haricots verts, the dish offers a beautiful contrast of textures. The addition of oil-packed anchovy fillets provides a deep, savoury umami flavour that perfectly balances the acidity of the red wine vinegar and the natural sweetness of the Sun Gold tomatoes.

As a heart-healthy option, this colourful salad is rich in antioxidants and healthy fats, making it an excellent choice for a light lunch or a sophisticated side dish for grilled fish. It is best served at room temperature to allow the various tomato varieties to release their full flavour. Finish with a flourish of flaky sea salt and peppery celery leaves for a professional touch.
