This simple lemon vinaigrette is a versatile staple that brings a bright, zesty lift to any seasonal salad. By using fresh lemon juice and zest paired with quality extra-virgin olive oil, you create a dressing that is far superior to shop-bought alternatives. The addition of a little Dijon mustard provides a subtle savoury depth and helps to create a perfectly smooth, emulsified texture that clings beautifully to crisp leaves or roasted vegetables.
As part of a heart-healthy diet, this homemade dressing is an excellent way to control your salt and sugar intake while enjoying beneficial fats. It is incredibly quick to whisk together and can be made in advance, making it ideal for busy midweek meals. Try drizzling it over a Mediterranean grain bowl, grilled fish, or a simple green salad for a light and refreshing finish.
