Roast Side of Salmon with Mustard, Tarragon, and Chive Sauce

This roast side of salmon with mustard, tarragon, and chive sauce is a sophisticated yet deceptively simple centrepiece. Combining the punchy heat of brown mustard with the aromatic sweetness of fresh tarragon and chives, the glaze creates a vibrant crust that keeps the fish incredibly succulent. It is a fantastic choice for a celebratory lunch or a light dinner, offering a beautiful balance of rich omega-3 fatty acids and bright, zesty citrus flavours.

As a heart-healthy main course, this dish focuses on high-quality protein and fresh herbs rather than heavy fats. The salmon side cooks remarkably quickly at a high temperature, ensuring a tender finish every time. Serve it alongside some steamed seasonal greens and crushed new potatoes for a balanced, nutritious meal that feels truly indulgent without the fuss.

How to make Roast Side of Salmon with Mustard, Tarragon, and Chive Sauce

Position rack in centre of oven and preheat to 232°C. Line large rimmed baking sheet with parchment paper. Mix first 7 ingredients in medium bowl. Season mustard sauce lightly with salt and generously with pepper. Place salmon, skin side down, on diagonal on prepared sheet. Spoon 120ml mustard sauce atop salmon, then spread over, covering completely. Sprinkle salmon generously with salt and pepper. Roast just until salmon is opaque in centre, about 15 minutes. Using parchment as aid, transfer salmon to platter. Cut crosswise into pieces and serve with remaining mustard sauce.
