This vibrant courgette melon salad offers a sophisticated blend of sweet and savoury flavours, making it an ideal choice for a light summer lunch. The combination of succulent smoked chicken breast and refreshing honeydew melon creates a beautiful contrast, while the salted courgettes provide a crisp, clean texture. Fresh mint and zesty lime juice tie everything together, resulting in a dish that feels elegant yet simple to assemble using a mandoline or sharp knife.
As a diabetes-friendly recipe, this salad is naturally low in carbohydrates and high in lean protein. The addition of Parmigiano-Reggiano adds a rich, salty depth without the need for heavy dressings. It is a wonderfully healthy option for those seeking a nutritious, homemade meal that doesn't compromise on taste or presentation. Serve it immediately to enjoy the herb-infused brightness at its best.

Ingredients for Courgette Melon Salad
2 medium courgette (350g total)
1 teaspoon salt
2 (3-inch-wide) wedges honeydew melon, seeded and rind removed
1 whole smoked chicken breast (450g), skinned and thinly sliced crosswise with a knife
1 (1/2-lb) piece Parmigiano-Reggiano
1/4 cup packed fresh mint leaves, cut crosswise into thin shreds
60ml extra-virgin olive oil
60ml fresh lime juice
an adjustable-blade slicer
How to make Courgette Melon Salad
Cut courgette crosswise diagonally into 1/8-inch-thick slices using slicer and transfer to a colander set over a bowl. Sprinkle with salt, tossing to coat, and let stand 5 minutes, then rinse under cold water. Arrange in 1 layer on paper towels and pat dry.
Cut melon wedges lengthwise into 1/8-inch-thick slices using slicer.
Divide melon, courgette, and chicken among 4 plates. Shave about one fourth of cheese into curls with a vegetable peeler and divide curls and mint among the 4 plates. Drizzle each plate with oil and lime juice. Season with salt and pepper. Serve immediately.
