This vibrant Spanish anchovy, fennel and preserved lemon salad is a masterclass in balancing bold Mediterranean flavours. The saltiness of the white anchovies, known as boquerones, pairs beautifully with the aniseed crunch of thinly sliced fennel and the punchy citrus notes of preserved lemon. It is a light yet deeply satisfying dish that celebrates fresh, high-quality ingredients with minimal fuss.
As a diabetes-friendly recipe, this salad is naturally low in carbohydrates and rich in heart-healthy fats from the extra-virgin olive oil. The addition of peppery rocket or delicate lamb’s lettuce provides a nutrient-dense base, making it an excellent choice for a nutritious lunch or a sophisticated starter. Serve it chilled on a warm afternoon for a truly refreshing dining experience.
