Smoked Salmon and Leek Scramble with Meyer Lemon Crème Fraîche

This smoked salmon and leek scramble offers a sophisticated twist on a classic breakfast favourite. By gently sautéing leeks until they are sweet and tender, you create a flavourful base for silky, cream-enriched eggs. The addition of zesty Meyer lemon crème fraîche provides a bright, citrusy contrast to the rich, savoury notes of the oak-smoked fish, making it a truly balanced morning meal.

As a protein-rich, diabetes-friendly option, this dish is both nourishing and indulgent without being heavy. It is an excellent choice for a weekend brunch or a special holiday breakfast, particularly when served on a warm platter. For the best results, use the freshest free-range eggs and high-quality salmon to ensure every mouthful is packed with delicate flavour and texture.
