Seafood Cocktail

This elegant seafood cocktail is a sophisticated take on a British classic, showcasing a luxurious trio of fresh lobster, lump crabmeat and succulent prawns. Unlike traditional versions laden with heavy mayonnaise, this recipe uses a bright lemon and extra-virgin olive oil dressing to highlight the natural sweetness of the shellfish. The addition of finely diced celery and carrot provides a refreshing crunch, while a hint of jalapeño adds a subtle, warming depth that cuts through the richness of the seafood.

As a diabetes-friendly option, this dish is naturally low in carbohydrates and high in lean protein, making it an excellent choice for health-conscious entertaining. It is incredibly versatile and can be prepared up to six hours in advance, allowing the flavours to marry perfectly. Serve it chilled in elegant wine glasses for a light, summery starter or a delicate celebratory lunch that is as nutritious as it is impressive.

Ingredients for Seafood Cocktail

  • 350g cooked large prawns (peeled, deveined, tails removed), halved crosswise

  • 230g fresh lump crabmeat, cartilage removed

  • 230g fresh lobster meat, cut into 1/2-inch pieces

  • 25g finely diced carrot

  • 25g finely diced celery

  • 1 tablespoon drained tiny capers

  • Salt and freshly ground black pepper, to taste

  • 1 teaspoon finely minced red or green jalapeño pepper, ribs and seeds removed

  • 2 tablespoons chopped fresh flat-leaf parsley

  • 1/3 cup highest quality extra-virgin olive oil

  • 45ml fresh lemon juice (from 1 large lemon)

How to make Seafood Cocktail

  1. Place the prawns, crab, lobster, carrot, celery and capers in a large bowl. Using a rubber spatula, gently fold together the ingredients, being careful not to break up the crab too much. Season with salt and pepper.

  2. Add the jalapeño pepper and parsley, then carefully fold in the olive oil and lemon juice, tasting as you go along. Adjust the seasonings and serve immediately, or chill for up to 6 hours. Divide seafood between 8 wine glasses for serving.
