Scrambled Eggs with Smoked Salmon and Lemon Cream

This elegant recipe for scrambled eggs with smoked salmon and lemon cream elevates a classic breakfast combination into something truly special. The rich, silky texture of the eggs is perfectly balanced by the salty depth of the fish and the vibrant, herbaceous notes of lemon and thyme. By using soured cream instead of heavy double cream, the dish maintains a lighter profile while still feeling indulgent, making it a sophisticated choice for a weekend brunch or a quick, high-protein weekday meal.

As a diabetes-friendly option, this dish is naturally low in carbohydrates and packed with healthy fats and lean protein. The addition of fresh spring onions provides a subtle savoury crunch that complements the delicate salmon. For a complete and well-rounded breakfast, serve these eggs alongside a slice of toasted wholegrain or rye bread, or enjoy them exactly as they are for a satisfying and nutritious start to the day.
