Roast Leg of Lamb with Salsa Verde

This roast leg of lamb with salsa verde is a sophisticated take on a classic Sunday centrepiece. By butterflying the lamb and stuffing it with a vibrant mix of fresh parsley, mint, and salty capers, the meat is infused with a deep, savoury flavour that perfectly balances the richness of the roast. It is an excellent choice for those seeking a diabetes-friendly option, as it focuses on high-quality protein and heart-healthy olive oil rather than sugary glazes or heavy starches.

Preparing the lamb this way ensures every slice is tender and zesty, making it ideal for a family gathering or a festive lunch. Pair this Mediterranean-inspired dish with a selection of steamed spring vegetables or a crisp green salad for a light yet satisfying meal. The homemade salsa verde adds a beautiful punch of acidity, cutting through the succulent lamb for a truly refined finish.

How to make Roast Leg of Lamb with Salsa Verde

Stir first 10 ingredients in large bowl for salsa verde. Place lamb on work surface, smooth-side down. Sprinkle lamb with salt and pepper, then garlic. Rub 60ml salsa verde into lamb. Roll up lamb. Using kitchen string, tie lamb every 2-inches to hold together. (Lamb and salsa verde can be prepared 1 day ahead. Cover separately and chill. Let lamb and salsa verde stand at room temperature 1 hour before continuing.)

Preheat oven to 232°C. Place lamb on rack in roasting pan. Roast until thermometer inserted into thickest part of lamb registers 49°C for medium-rare, about 1 hour and 20 minutes. Let stand at room temperature 15 minutes. Transfer lamb to cutting board; remove kitchen string. Cut crosswise into thin slices. Arrange sliced lamb on platter. Spoon some salsa verde over. Serve lamb, passing remaining salsa alongside.
