This elegant roasted Jerusalem artichoke recipe transforms the humble, nutty tuber into a sophisticated dairy-free side dish. Often overlooked, Jerusalem artichokes develop a wonderful sweetness and creamy texture when roasted at high temperatures. Topped with a vibrant, zesty salsa verde, this dish offers a beautiful balance of earthy root vegetables and sharp, herbaceous flavours that will brighten any dinner table.
A brilliant addition to a Sunday roast or as part of a seasonal spread, this recipe is naturally healthy and packed with character. The salsa verde, made with flat-leaf parsley, capers, and a hint of chilli, provides a punchy contrast to the soft artichokes. Serve it alongside roasted meats or as a standalone plant-forward starter for a flavourful and nutritious homemade meal.
