These grilled garlic-marinated baby courgettes offer a fresh and vibrant way to enjoy seasonal produce. By piercing the skin of the vegetables before marinating, the punchy garlic-infused olive oil seeps deep into the flesh, ensuring every bite is packed with savoury flavour. The high heat of the grill caramelises the natural sugars in the courgette, resulting in a beautiful charred finish that contrasts perfectly with the tender centre.
As a diabetes-friendly side dish, this recipe is naturally low in carbohydrates and rich in healthy fats from the olive oil. These courgettes are excellent served alongside grilled lean meats, such as chicken or fish, or enjoyed as part of a Mediterranean-style sharing platter. Simply swap the barbecue for a hot griddle pan if you prefer to cook indoors.
