These cider-glazed lamb chops offer a sophisticated balance of sweet and savoury notes, making them a standout choice for a quick midweek treat or a relaxed weekend dinner. The glaze, infused with aromatic ginger, garlic and tangy rice vinegar, caramelises beautifully under the grill to create a sticky, deeply flavoured crust that complements the richness of the lamb. Using unfiltered cider adds a wonderful depth that elevates this simple meat dish into something truly special.
As a dairy-free main course, this recipe is naturally light yet incredibly satisfying when served alongside crushed new potatoes or a crisp seasonal salad. The short resting time is essential, allowing the juices to redistribute for a tender, succulent finish. Finished with a scattering of fresh spring onions, these chops are as visually appealing as they are delicious, proving that high-quality ingredients need very little fuss to shine.
