This elegant bresaola carpaccio with gribiche vinaigrette is a sophisticated starter that celebrates the deep, savoury flavours of air-dried beef. By pairing the lean, cured meat with a bright, piquant dressing inspired by a classic French gribiche, you create a dish that is both light and intensely satisfying. The addition of peppery baby rocket and salty Parmigiano-Reggiano provides a fresh contrast to the rich beef, making it an ideal choice for a summer dinner party or a refined weekend lunch.
As a diabetes-friendly option, this recipe focuses on high-quality proteins and heart-healthy fats without the need for added sugars or heavy carbohydrates. The radish and cornichon garnish adds a delightful crunch and tang, ensuring every mouthful is perfectly balanced. Serve this colourful platter at the centre of the table for a healthy, homemade appetiser that looks as beautiful as it tastes.
