This vibrant carrot and apple soup is a beautiful balance of naturally sweet and savoury flavours. By simmering fresh carrots and fuji apples with aromatic ginger, nutmeg and allspice, you create a complex base that feels deeply comforting yet surprisingly light. The addition of apple juice concentrate provides a bright acidity that lifts the earthiness of the vegetables, while the fresh mint garnish adds a cooling, fragrant finish to every spoonful.
As a dairy-free recipe, this soup is an excellent choice for those seeking a heart-healthy or allergen-friendly meal without sacrificing creaminess. The texture is achieved purely through blending the softened vegetables, making it a nutritious option for a weekday lunch or an elegant dinner party starter. Serve it alongside some crusty granary bread for a satisfying, wholesome meal that the whole family will enjoy.
