This vibrant prawn, cucumber, and mango salad is a beautiful celebration of fresh flavours and contrasting textures. The sweetness of the ripe mango pairs perfectly with the succulent prawns, while the cucumber provides a cooling crunch that makes this dish an ideal choice for a light summer lunch or an elegant dinner party starter. Finished with a punchy Dijon mustard and dill dressing, it offers a sophisticated balance of sweet and savoury notes that will brighten any table.
As a dairy-free recipe, this salad is a fantastic option for those seeking a lighter meal without compromising on creaminess or depth of flavour. The use of crisp Bibb lettuce leaves as serving cups adds a touch of restaurant-style flair, making it as visually appealing as it is delicious. For the best results, ensure your mango is perfectly ripe to provide that essential tropical sweetness against the zesty dressing.
